my version of Paht Thai

PAHT THAI  =  makes one serving

dry rice stick noodles
oil [I use peanut oil]
1 egg
minced garlic
'meat' [shrimp, chicken, pork, beef, tofu]
fish sauce
sugar
bean sprouts
dry roasted peanuts
lime

boil enough water to cover roughly 4-6 ounces of dry rice stick noodles [I used 1/3 of a package of Mai Fun brand]
after water boils - add noodles & remove from heat so they can soften - stir after 5 minutes & they should be cooked & soft

in pan on hot heat = 1 T peanut oil & T of fresh minced up garlic cloves
add in cut up protien & cook for few minutes
<<if using already cooked shrimp or meat - throw it in the pan & cook 1 minute to warm up>>
set that aside in a small bowl

then scramble up an egg in the same pan, put scrambled egg in same bowl

add another 1 T peanut oil to pan & then drained rice noodles - stir to coat lightly with oil for 1-2 minutes, then mix in:

 1 T sugar
 1 T peanut butter
 1-2 T Thai fish sauce
 1 T soy sauce

stir, then add scrambled egg, 'meat', 1/2 cup bean sprouts, stir and cook about 2 minutes, then plate food & dig in.  Sprinkle with a handful of dry roasted peanuts and serve with lime or lemon wedges
