Another "Special" for the folks at Vrghr's Office!

For today's Birthday Party for a co-worker at Vrghr's shop, wuff was asked to use up some leftovers from a prior meeting. We happened to have a couple loves of Texas Toast, and what better breakfast use to put slightly old toast to, but French Toast?

Of course, you know this wuffy couldn't just plate up "ordinary" stacks of French Toast for his friends, Right? So, Vrghr kicked this up several degrees!

First, the toast is sliced nearly in half and then stuffed with a mixture of Wild Blueberry Preserves and Cream Cheese. The batter is flavored with Vanilla, Cinnamon, and a bit of Agave Syrup. Then, the top is covered with sugar and flamed to melt it into a crisp Brulee layer. Finally, a spoonful of thick, creamy, slightly sweet Mascarpone cheese is added, and garnished with a few plump, ripe blueberries!

Now THAT is a French Toast a wuff can be proud of! A crunch of the crunchy brulee topping as you bite into it. Flavors of vanilla and cinnamon permeate the bread. Elegant, rich, creamy Mascarpone hits the tongue followed by a second, stronger and sweeter flood of the sweetened berry interior. Yup! This is definitely an elegant, tasty, and fun dish to start the day with!

And though a Kitchen Torch is needed for the Brulee topping, everything else is easy and quick to do. Leave that coating off, and you have a meal anyone could plate up! Enjoy it when you want a touch of something "fancy" and sweet to start the day!

Ingredients
10 slices double-thick Texas Toast (or double the number of normal bread)
5 eggs
1 1/3 C Table Cream (Can use Half & Half, or milk)
6 oz whipped Cream Cheese
4-6 Tbs Fruit Preserves of choice (Wuff used Wild Blueberries)
4-5 Tbs Flour
3 Tbs Butter (divided)
2 tsp Agave Syrup
~1/2 tsp Vanilla (Or 1 vanilla bean, split w/inside scraped out)
~1/4 tsp Ceylon Cinnamon
Granulated Sugar (Raw, Turbido, or White)
Fresh fruit to match/complement the chosen filling (for garnish)

Kitchen Torch

Instruction
Combine the eggs, cream, Agave Syrup, cinnamon, Vanilla, and flour in a large mixing bowl and whisk thoroughly until completely combined.
With a serrated knife, slice each piece of Texas Toast almost in half edgewise, to create 2 slices of bread held together at one edge.
Mix the selected Fruit preserves with the whipped cream cheese in a small bowl.
Place ~ 2-3 Tbs of the Fruit mixture between the cut slices of the bread, spreading almost to the edges

Preheat electric skillet/griddle to 350 degrees.
Place 1 Tbs of the butter in the hot skillet/griddle and spread it about when it melts.

Dip each "fruit sandwich" into the egg batter, making sure to completely cover both sides
Place the drenched bread in the skillet and cook until toasty (about 4-6 minutes).
Flip, and toast the other side.

Just before the toast is ready to remove from the skillet, sprinkle a good coat of sugar on top of each slice
Using the kitchen torch, carefully heat the sugar on each piece until it just begins to melt and flow, bubbling slightly. Extinguish torch!

Remove to individual serving plates. Top each slice with a spoonful of Mascarpone cheese, and garnish with fresh fruit that matches/complements the filling

Add another pat of butter to the electric skillet, and whisk up the egg batter again before making the next batch.

Enjoy quickly - the Brulee will soften if you "hold" the slices for too long, but will stay crispy for at least 15 minutes to a half hour, depending on how thick you made it.
