Savory Chicken Casserole:

Chicken Thighs.

32oz chicken stock
2 cans cream of mushroom soup
1/2 cup (1 stick) melted butter
2 cups uncooked white rice
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon dried thyme
4 sticks cellery chopped fine
3 cloves minced garlic
small handfull of fresh basil leaves, chopped fine
grated cheese of choice

1 Combine chicken broth, cream of mushroom soup, celery, butter and rice and stir.

2. Combine salt, paprika, garlic, Thyme, Basil and pepper and stir. Add half of this to rice and stir well.

3. Spray 3qt baking dish with cooking spray and pour rice mix into dish.

4. Put chicken into largish chunks, season with salt and pepper. Arrange on top of rice mixture, and sprinkle with remaning spice mix from step 2.

5. Cover tightly, bake at 375 for 1 hour and 15 minutes. Remove lid, cover with shredded cheese, and cook for 10 more minutes.
