Sweet Smoked Maple Sausage BBQ Beans

     "Ok..."  the rabbit says.   "This is going to be a new experiment since we are going to be using the Smoker this weekend to smoke some meat (including some pork ribs.)   The idea is to have some beans in the bottom to capture the juices that drip off the meat before it just falls into the flame or the ground.   Since my Maple BBQ Beans were a hit, I thought I'd make some changes and try something similar, but better."


1 lb "sweet" sausage, diced and browned (2 types if I can get it.   Something with paprika)
1/4 lb Bacon, chopped and browned
2 large RED onions, coarsely chopped
1 Sweet Bell Pepper, medium chopped
2 can (15 ounces) red kidney beans, drained and rinsed
2 can (15 ounces) white kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1/2 cup Sweet & Spicy BBQ Sauce
1/2 cup Maple BBQ Sauce
1/4 cup Maple Syrup
1 TB Worcestershire sauce
8 tablespoons molasses, Brer Rabbit Full Flavor
1/2 cup Tennessee whiskey
2 teaspoon Chili Powder
1 TB Special Mustard Powder
1/2 teaspoon salt

1.  In a frying pan, brown the diced sausage and choped bacon.    Don't get the bacon crispy, just brown it and get the some of the fat out of it.   Put in pan for smoker (including rendered fat.)

2.  Drain and rinse all beans, put them into the pan for the smoker.

3.   Heck, just add EVERYTHING else into the pan for the smoker and stir to mix.

4.  Smoke while there are drippings coming off the meat above.

5.  Eat Beans.

Looks like a lovely recipe!

You might be able to dice up those 2 poblamo peppers in there too, for more complexity. But should be great just as written!!

And for those curious - here's one of the meats that will be dripping down into those beans this weekend; wuffy's 3-2-1 BBQ Beans!!!

1/2 cup Sweet & Spicy BBQ Sauce

1/2 cup Tennessee whiskey
