Super Simple Savory Chicken & Rice lunch in 15 minutes or less.

Wuff has a generic one of those George Foreman lo-fat grills. You know, the ones that look like cheap Panini sandwich presses? They're great for doing some quick burgers, hot dogs, fish sticks, and other nice, flat, grill-able meals. They cook fast, little effort, and clean up quick. Perfect for when you don't want to heat up the house, and dirty up a lot of pots and pans.

Vargr's work also has one, along with a microwave, fridge, etc... pretty normal for many offices.

Here's a meal that wuff has made when he was in a hurry and wanted something more than a microwave pizza slice. Something that looked like a real meal, and tasted the same way, but didn't take the whole lunch break to put together.

This can also be made with a small skillet substituting for the grill-thing, though it takes slightly more time (only one side cooks at a time) and effort (you have to flip the chicken).

Either way, this is one of the easiest meals you could put together, and its very healthy too! Warm up a bit of your favorite veg (like corn, green beans, broccoli) to go with, and you've really got a lovely plate!

It doesn't hurt that it tastes really darn good too!

Ingredients
For the rice
1/2 Cup instant rice
1/2 Cup water - hot from the tap or from your coffee service if you have such
1 chicken bullion cube
1 "pat" butter (about 1/3 Tablespoon)
(optional) A pinch of dried flavoring herbs (wuff likes tarragon, marjoram, sweet basil, or a sprinkle of Mrs Dash table blend or similar condiment)
LARGE coffee cup and a bit of plastic wrap or a saucer (or a microwave safe bowl with a cover)

For the chicken
1 small boneless/skinless chicken breast (6 - 10 oz)
Lemon Juice (wuff used one of those plastic squeeze lemons)
1/3 C Zesty Italian Dressing
Mrs Dash seasoning of choice (table blend or original are both nice) or your favorite mixed season blend
A 1 Qt zip-top bag
Salt/pepper - to taste

Directions
The night before or morning of, slice the chicken into 1/2-3/4" wide strips. Put them in the zip-top bag. Add the Zesty Italian salad dressing. Close and refrigerate until lunch.

At lunch time, plug in the grill and let it start heating.

Begin the rice: Crunch up the bullion cube. Pour the hot water into the large coffee cup (or bowl) and stir in the crushed cube. Add the butter (and optional herbs), stir, and then add the rice and stir one last time.

Microwave on high for 4 minutes. Cover with a bit of plastic cling wrap or an upside down saucer, and let rest for 5 minutes.

When the grill comes up to temperature and the rice has just finished heating (it takes 5 minutes to rest, so don't start the chicken too early or it will be dry!!) remove the chicken from the zip-top bag. Do not rinse off any salad dressing still clinging

Place the chicken on the grill.

Season the chicken with a few shakes of the Mrs Dash seasoning or your other favorite seasoning blend and cook to your grill's instructions. (Vargr's grill took between 3 and 5 minutes to finish.) Chicken should be done, but don't let it cook until it drys out.

Fluff the rice with a fork, and pour it out onto your serving plate.

Squeeze a bit of the lemon juice over each strip of chicken, and place them on top of the rice.

(Note: If you want to warm some veggies, do it in the microwave while the rice is resting outside and the chicken is grilling.)

Add salt and pepper to taste, if needed (the bullion cube will add salt to your rice, and the zesty dressing and herb sprinkle may be all you need on the chicken).

ENJOY YOUR MEAL!

Makes 1 serving

Note: Wuffy normally "gets back" about 1/2 to 2/3 of the salad dressing, left in the zip-bag. That part doesn't count to the calories. It should not be reused, since it has been in contact w/raw chicken and you haven't cooked it safely on the grill. Just toss it and the bag out.
