Wuff caught a Kraft Foods recipe from an email, and was intrigued: Grapes and lemons with chicken! It seemed an unlikely combination, but tweaked the wuffy's sense of whimsy enough to try it out. And is Vargr ever glad he did!

This recipe, as adjusted to how wuffy prepared it, is simple enough for beginners but packs powerful flavors with lovely complexity brought in by first cooking the chicken in Zesty Italian salad dressing.

This recipe "keeps" well, and reheats nicely in a microwave for a super-easy work lunch.

Note: The lemon flavor is pronounced. If you're not a lemon chicken fan, this may not be the meal for you.

Chicken with Lemon Grape Cream Sauce

Ingredients:
1/2 cup Zesty Italian Dressing
3-4 ea. Boneless Skinless chicken breasts (~1+ pound)
1/2 Cup milk, chicken broth, white wine, or half & half
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened, cubed
Zest and juice of 1 lemon + 1 tablespoon lemon juice
2 cups seedless red or green grapes, halved/chopped
Fresh parsley, chopped (for garnish)

Directions:
Slice the chicken breasts lengthwise into 1/2 inch strips, the cut them in half.
Chop the grapes or slice them in half.

Put the Zesty Italian salad dressing in a large skillet. Heat over high heat, and add sliced chicken. Stir and cook until chicken is just done (8-10 minutes)

Remove chicken with a slotted spoon and set aside. Reduce heat to medium high.

Add cream cheese to leavings in the skillet. Stir around until melted. Add lemon zest and juice. Stir into melted cream cheese. If too thick, add chicken broth, wine, milk, or half and half to thin to desired consistency. Cook together for a couple minutes. Add the sliced/chopped grapes and stir to distribute.

Return cooked chicken to sauce. Stir to coat. Allow to warm together for 2-3 minutes.

Serve over rice or pasta.

If desired, garnish with chopped fresh parsley.

Makes 4-6 servings.
