Woo hoo! Ok, so we have a garden, and our garden has some grown up carrots (not the little ones you get from the store.) These carrots are three inches wide! Normally, we don't eat carrots this big, because they turn bitter as they get older.. but I found an interesting recipe.

Ingredients:

HUGE Carrots (I used two) cut into 1" slabs
1/4 cup oil
1 teaspoon salt (I used omnivore salt)
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg.

Directions:

1 Preheat oven to 420F.
2. Mix all ingredients into a mixing bowl and toss well to coat. Make sure every bit of carrot is coated.
3. Put carrots onto a cookie sheet, cut side down/up Make sure they are all separated from each other.
4. Bake for 20 minutes. Flip each carrot slice. Cook another 20 minutes.
5. Remove from oven and allow to cool. YUMMY!!!
