ShadowCat-X made her family's Mexican Wedding Cookies and they are SO deliciously good!

Ingredients:

2/3 cup plus 1TB Bacon Fat
1/2 cup granulated sugar (300 grams)
2 teaspoons ground Cinnamon
1 Pinch of Salt.
2 Cups of Flour (240 grams)

Coating:
1/4 cup powdered sugar
1 tsp ground cinnamon

Instructions:
1. In a large bowl, beat bacon fat until it is fluffy.
2. Add the sugar, cinnamon, and pinch of salt. Mix until well blended.
3. Gently Gently stir in 1/4 of the flour and mix. Add another 1/4 of the flower and mix. Continue process until all the flour has been incorporated.
4. Refrigerate the dough, wrapped in plastic, for at least 20 minutes.
5. Preheat oven to 325F. Line two making sheets with parchment or lightly grease th em.
6. Roll out dough to 1/3 inch thick on lightly floured surface, cut out using cookie cutters.
7. Transfer to cookie sheets leaving 1 inch space between each cookie.
8. Bake for about 20 minutes, until the edges are turning light gold. The cookies are very fragile when hot, let them cool on the cookie sheet before moving them.
9. Mix Coating Sugar and Cinnamon in small bowl. Dust the cookies with mixture.
