Popular (No New Posts) Bacon-Fried Green Beans w/Shallots and Ham
A spur-of-the-moment invention prompted by some lovely garden-fresh green beans found at a local produce market. The resulting beans still have their garden-fresh snap and flavors, but are a bit more tender, and coated with a savory, flavorful glaze.

Popular (No New Posts) Vargr's Baked Mac and Cheese goodness
Built from scratch from the "ground up", starting with a white sauce and adding spices and cheeses, topped with a crispy Panko crumb and Grated Parmesan topping. This isn't your 'boxed cheesy stuff'!

Popular (No New Posts) Vargr's Holiday Supreme Mashed 'taters (w/parsnips)
Rich and decedant mashed potatoes, with cream cheese, garlic, and a hint of parsnip for added complexity. Too much for "every day" meals, but for special occasions, they're fantastic!

Popular (No New Posts) Corned Beef w Sweet Spicy Mustard Glaze (pressure cooker)
Hands down, this is the best corned beef Vargr has ever eaten. Incredibly tender, juicy, flavorful, with a nice touch of sweet, spicy mustard broiled into a thin crust. Delish!

Popular (No New Posts) "Dump" Chicken Recipes
These are called "Dump" chicken because you "dump" all the ingredients into a 1 Gallen freezer bag and freeze until ready to cook. Then you thaw them overnight and "dump" them into the slow cooker or cassarole dish to cook. Super easy!

Popular (No New Posts) Chipotle - Peach Marinade and Sauce
A semi-experimental composition to marinade pork for smoking. Should make a good 'mop' as well, and boiled down and thickened, a nice glaze and sauce. Lots of flavor, fruity, and with a nice 'kick' from chipotle.

Popular (No New Posts) Rum enhanced "Candied"-Apple and Pear sauce
Totally unlike the normal store-bought brands of applesauce. This chunky version has strong pear flavors to the apple, and the complexity is further enhanced with cinnamon "red hot" candies and a splash of rum! Delishious year 'round!

Popular (No New Posts) Vargr's Pressure Cooker Pot Roast with Veggies
A first try at another new dish with the Pressure Cooker. The flavor of this was tremendous, and the meat amazingly tender and juicy. Definitely a success, and quick, easy, and full of flavor.

Popular (No New Posts) Vargr's spicy Sausage, Red beans, and Rice - Pressure Cooker version
First "trial run" of the new pressure cooker. This turned out to be immensely flavorful, with a moderate heat. Not enough to raise a sweat, but puts a bit of a burn on the tongue. And the beans were soft and tender. Delightful!

Popular (No New Posts) (What a) Jerk Smoked Pork Loin
Powerful flavors, lots of heat, but not overwhelming. But easily "kicked up" if you want even more heat. Takes a bit of time to prep, but very worth it.
