Vargr, ShadowCat, and I are looking to put together a BBQ Party over the weekend of the 4th of July! If your interested, post in the chatter section. If you have a favorite dish of ours you'd want us to make, post in the Recipe's section. If you want to bring something, let us know!

| Really looking forward to being there! Nice of the company to fly me out ahead of the holiday weekend like that (though it wasn't for my benefit - meetings just happened to come up at the right time - I'm certainly not above taking advantage of it! *grins*).

We are SO planning to be there! That sounds like a blast! We will likely bring green leafies [salad]. Any specific kinds of dressings you guys like?

I'm a fan of the following (pick one or as many as you wish):
- Honey Mustard
- Ranch
- Raspberry balsamic
- Catalina
- 1000 Island
I'm sure you'll find something in that list that suits others' tastes as well!

Shadowcat-X's favorites are Honey Mustard or Thousand island. I like both of those to!

Ok! So we are off! I just checked and I won't have to work the long 4rth of July weekend. I will have July 2, 3 & 4 off from work. which day would we like to have the BBQ?

Ok, it looks like we are having the BBQ on the 4th of july itself. My parents will also be coming to the party!
Hey Vargr, we should see about smoking the big pork dishes the sunday before so that the long cooking is done. That will also give me time to make my Momma's Beans. For quick cooking right now we have 2 flats of chicken legs/thighs and a salmon (which I'm pretty sure ShadowCat-X won't share.. *giggle* She does like her fish.) I need to pick up at least one more big roast for the Sunday smoking. We can pick up more stuff for the fast smoking on the Friday before the get together.

Agreed! Especially since those big roasts will take 6+ hours (closer to 10 for some) to hit the right temperatures.
As for the fish - I might pick up another. That one we did last time was SO good! With crackers and on its own both.
Look for London Broil, or Brisket as two good options, or similar cuts if you're after beef.

Beverages would be welcome. We are likely to start eating about 1pm.. and the meal may continue for a LONG time! You are also welcome, with or without beverages.
Vargr and I finished smoking the big meat on Sunday. So far we have:
A Cross Rib Beef Roast in a Catalina marinade (and with a catalina sauce.)
A Cross Rib Beef Roast with a sweet & spicy rub.
A pork shoulder in Melchars rub (slightly modified by Vargr)
Pulled Pork in a spicy rub.
These were smoked with a mix of Cherry wood and Red Oak. The shortest cooking time was about 4 hours. The longest was about 10 hours.
On Sunday we will be smoking the faster meats.. such as Chicken (ShadowCat-X is making some with her famous Orange/Jalapenio Marinade/Mop.)
