Spinach and Mushroom stuffed Chicken

     Spinach and Mushroom stuffed chicken.   Makes 1 serving.

    A delightfully spiced chicken dish to quickly prepare and cook on the grill.

Ingredients:

3 x Safeway Young Chicken Thighs, Boneless & Skinless (336 grams)

3 Tablespoons chopped spinach

1.5 tablespoons chopped portabello mushroom.

1.5 tablespoon chopped white onion

3 tablespoons Dijon Mustard

Instructions:

1.   Thaw Chicken Thighs

2.  Cover with paper towel and pound thigh flat using a mallet.

3.  Spread Dijon Mustard on one side of thighs.

4.  Mix chopped onion, mushroom, and spinach together and spread on the same side of thighs as the mustard.

5.  Roll thighs up (like cigars) with mustard on the inside, Skewer with metal skewers to keep shut.

6.  Grill chicken for 20 minutes, 10 minutes per side (or until done)

Cooking Time: 20 min

Calories: 375

Protein: 60.8g

Carbs: 3g

Fat: 4g

Cholesterol: 85mg

Sodium: 790mg

I'm coming to the conclusion that it's cleaner to use cooking twine rather than skewers, though.  I end up with half my stuffing falling onto the burners when i turn the darn things.

Hmm.... perhaps one of those 'grill baskets' like they sell for fish and other items that close up like a clamshell? If it's small enough, it ought to hold the chicken firmly enough to keep the 'cigars' from unrolling. And no worrys about the twine burrning away during a flareup.
