Boojum sighs a happy sigh... "So.. those of you who look at my recipe will notice that it makes 7 - 1cup sized meatloafs... and those with sharp eyes will notice that there are only 6 meatloafs in the picture..." The bunny blushes, "Well.. it seams that one got eaten by a hungry rabbit before he had a chance to take the picture....." He considers. "In the future, I will probably cut a hole in the bottom of the pans so that the excess juices can drain out."
Ingredients
3 pounds ground beef chuck
1 pounds ground turkey
1 cup fresh bread crumbs
1/2 cup dried minced onion
3/4tsp Powdered Garlic
2 eggs, beaten
1 Tb dried Mexican Oregano
1 tsp salt
½ tsp black pepper
½ cup Jack Daniels Original no7 barbeque sauce for mixing
1 cup Jack Daniels Original no7 barbeque Sauce for topping
heavy duty aluminum foil to make your own loaf pan or 2 disposable
aluminum foil pans
1. Mix everything except the Topping BBQ Sauce in a big mixing bowl.
2. Cover mixing bowl with plastic wrap and put in Fridge to meld flavors.
3. Use a 1 cup measure to form loafs (I put the loafs in small foil loaf pans 'cause I like them, makes 7 1cup loafs)
4. Place in smoker at 225 for 2-3 hours, or until the inside of the loafs reach 175F
5. Brush the rest of the BBQ Sauce over them during the last hour (or so) of cooking.
6. Drain excess liquid and allow to cool on counter.Attachment: Meatloaf.jpg (Downloaded 8 times)
