Lobster and Shrimp "Surprise" Pasta

Here's something wuffy tossed together to take advantage of a wonderful surprise ingredient. Hence, the "surprise" in the title.

Wuff's roommate was helping out at a local food pantry. As thanks for his support, they offered him a bit of the food they had. Specifically, a small zip bag of some leftover split lobster tails from a local seafood restaurant.

Vrghr combined these with some wonderful garlic & herb shrimp from "Schwans" delivery (http://www.schwans.com/products/productDetail.aspx?id=52008&c1=10429&c2=11468). And wuff tossed in a bit of green peas, just for fun.

The sauce is a combination of butter, lobster stock, lobster bullion (http://www.amazon.com/Better-Than-Bouillon-Lobster-Base/dp/B00016LA8Y/ref=sr_1_1?ie=UTF8&qid=1425337448&sr=8-1&keywords=better+than+bullion+lobster), garlic, cream, herbs, spices, and some Marsala wine. VERY good stuff all on it's own! Served it all over some Old-Bay seasoned Angel Hair pasta. YUM!

Perhaps not something that one would put together every day, but a darn tasty result!

Ingredients:
3 4-6 oz lobster tails, boiled until just done
6 oz Garlic Herbed packaged Shrimp (Schwans)
~2 C Water
1/2 C Whipping Cream
~1/2 C Frozen Peas
~ 1/2 C Marsala Wine
3 Tbs Butter
1 Tbs chopped (dried) Parsley
1 Tbs Cream Cheese
3 tsp Better-Than-Bullion Lobster Base
2 tsp Minced Garlic
2 tsp Lemon Juice
1 tsp Smoked Paprika
1 tsp Granulated Onion
1/2 tsp Marjoram
1/2 tsp Old Bay Seasoning
1/2 tsp Granulated Garlic
1/2 tsp Fennel Pollen
1/2 tsp White Pepper

2 tsp Arrow Root
3-4 Tbs cold Water

For The Pasta
~ 3 Qt Water
1/2 box Angel Hair Pasta
~1 Tbs Cooking Oil
2 tsp Salt
2 tsp Old Bay Seasoning
1 Tbs Butter

Directions:
If using uncooked lobster tails, boil them in about 3 Cups salted, seasoned water (1 tsp salt, 1 tsp Old Bay seasoning, 1 tsp granulated garlic) for about 8-10 minutes. The shells will turn bright red and the meat will be tender when poked with a fork.

Remove the lobster meat from the shells and slice into 1 inch chunks.

Put the empty lobster tail shells into just enough water to cover. If you just boiled the tails, use that! Boil the shells in the seasoned water for about 15 more minutes to extract as much lobster flavor from the shells as possible.

In a large stock or pasta pot, bring the pasta water to a rolling boil. Add the remaining pasta ingredients. Boil until pasta is al dente (about 8-10 minutes or less). Drain and cut in a tablespoon of butter in small chunks. Mix to coat pasta and keep the noodles from sticking.

In a Medium sauce pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant (~ 3 minutes). Add the cream cheese and allow it to melt in the butter.

Add the lobster water from the shells. Add the lobster base, smoked paprika, granulated onion, parsley, marjoram, Old Bay Seasoning, granulated garlic, fennel pollen and white pepper. Whisk briefly to combine.

Add the Marsala wine. Allow to simmer a minute or two.

Add the frozen herbed shrimp and the frozen peas allow to come back to a simmer. Simmer until the peas are thawed and the shrimp is barely done (about 5-8 minutes).

Mix the Arrow Root with the cold water to make a slurry. Gradually whisk in the slurry a tablespoon or so at a time.

When the sauce is just thickened to your liking, whisk in the whipping cream and the lemon juice.

Plate a portion of the Pasta in a bowl. Arrange some of the cooked lobster chunks on top. Pour the hot sauce over the pasta. Garnish with a bit of the chopped parsley.

Enjoy with some nice crusty sour dough bread!

Option: You could add a couple teaspoons of tomato paste to the sauce and whisk that in, to make it a lobster bisc, and serve this as a nice soup, too!
