Garlic Roasted Peanuts!

Garlic Roasted Peanuts

2 lbs raw peanuts
16 cups water
1 cup salt
1/2 cup garlic powder

Put 16 cups of water, 1 cup salt, and 1 cup garlic powder in LARGE pot on stove (I used my stock pot.

Apply heat and stir until salt and garlic are saturating the water.

Add 2 lbs of peanuts.

Put plate in pot to hold peanuts under the water.

Boil for 5 - 6 hours!

Strain and allow to dry.   Drying can take about 72 hours.   Putting a fan on them will help them dry faster.   Putting them in a food dehydrator (like I did) will dry them in a couple hours.

Preheat oven to 350

Put aluminum foil on cookie sheet, put a single layer of nuts on the cookie sheet (you may have to use more than one cookie sheet)

Bake in oven for 15 minutes.

Shake pan about to shift and roll nuts.

Bake in oven another 15 minutes.

Remove from oven and let cool.   They will become crunchy as they cool and the nuts will be all warm and salty and garlicy!  Woo hoo!

Yum! This sounds very good!

Of course, if you're impatient, you could just eat 'em hot from the boiling water, like Southern Boiled Peanuts (w/garlic). *grins*

Bet these would also go good, dried or hot, with spicy Cajun seasoning too!
