Grilled Cheese Sandwiches

So I was reading an article on yahoo today about how grilled cheese sandwiches are becoming one of the new "it" foods. . . and that got me thinking. How about a new cooking challenge?  What kind of gourmet grilled cheese sandwich can you come up with?

My idea (and I admit I ripped at least half of this off from the article) is a dessert grilled cheese sandwich using Banana bread and cheesecake filling, with strawberries in syrup and powdered sugar for a garnish.

For my grilled cheese s-wiches, I prefer large round sourdough bread, a mixture of sharp cheddar + either jack or swiss cheese, and pure 100% unadulterated butter used in the grilling (about 1/2 tble per side).  Add a bit of dill, a dash of salt, and you're golden.

All said and done, it can be made for approx 14-17 WeightWatchers points (using the big bread, and about 2-3 oz of cheese) so a bit pricey from a weight-loss perspective, but do-able if you budget appropriately.

          While I like my good ol' wheat bead with Velveeta grilled cheese, I also enjoy rye bread with swiss as a grilled cheese alternative.

Does a Quesadilla count as "grilled cheese"? *grins* It's just a thinner "bread" around the cheese. And it lends itself to a lot of variations.

Or, if not, what about a cheese Panini?

Still, it's hard to beat the "basic" version: American Cheese slices on white bread. A teeny bit of mayo on one slice, and butter on the "fryin' sides" of the bread, in a good hot skillet.
