Head Sweatin' Chili

    Here is my experimental chili for the week.  :)   It's an all meat chili, no beans.

 
  • 1 1/2 pound Beef Stew Meat, diced small
  • 1 1/2 pound Pork Stew Meat, diced small
  • 1 White Onion, chopped
  • 1 Yellow Onion, chopped
  • 3 teaspoons minced Garlic
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14 ounce) can diced tomatoes
  • 1 small can tomato paste
  • 5 chipotle chile peppers, diced fine
  • 1 pasilla de Oaxaca chile pepper, diced fine
  • 2 tablespoons ground ancho chile pepper
  • 1/2 teaspoon ground chipotle
  • 1 1/2 tablespoons ground cumin
  • 1 1/2 teaspoon sweet paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon rosemary
  • 2 small bay leaves, shredded
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
Step 1:  Brown the diced Beef, diced Pork, and 1/2 the onions, garlic, and peppers in a large frying pan (I had to do this in two passes since my pan wasn't big enough otherwise.)

Step 2: Dump everything into a crock pot (5 quart for mine).

Step 3: Add another 28oz of water to the pot (I refill the can of crushed tomatoes and add that)

Step 4:  Run Crock Pot on high, uncovered, for 4 hours to reduce liquid.  Stir every hour or so.

Step 5:  Run Crock Pot on high, covered, for 4 hours to finish cooking and melding of flavors.  Stir every hour or so.

     And thats it!  I just had my first bowl of the Chili and it is delicious!   I think the only change I might make next time is to add more Black Pepper.  It has a warmth that slowly builds as you eat more of the Chili, and it will definitely cause you to break out in a sweat.  

     I've got the Chili cooling now in the Crock Pot.  When it's cool I'll put it into plastic containers and freeze most of it for later use.  MMMMmmmmm.  Good Chili!
