Simple, savory smoked chicken w/Italian marinade
This is one of the easiest smoked chicken recipes. Wuffy uses it constantly, and it always gets wonderful comments at shop feasts, BBQs, and pot lucks!
3-4 Pounds (or more) chicken breasts and thighs (can use boneless, or boneless/skinless as well)
1 large bottle Italian salad dressing (cheap is good here. Use normal, zesty, light, or other, as you like)
Lemon Pepper seasoning
Lemon juice (1 fresh lemon is plenty)
Wood for smoking (Hickory, mesquite, oak, even Jack Daniels barrel chips are all good)
Large zip-top bags (gallon size, at least)
Divide the chicken up between the bags (if needed, should all fit in one 2-gallon size)
Pour in the bottle of Italian dressing. Zip the tops closed, expelling as much air as possible. Kneed and turn bags to make sure all the chicken is in contact with the dressing.
Refrigerate overnight, turning the bag at least twice to make sure all the chicken gets its time in the marinade.
Remove chicken and place on grill grids outside (over newspaper) to drip-drain (you want to keep the spices that were in the dressing clinging to the chicken, so don't rinse or rub dry.
Dust generously with lemon pepper seasoning.
Smoke according to your smoker's instructions until chicken is done, but juicy.
Put chicken in bowl and drizzle with fresh lemon juice, toss to cover all. Remove from bowl and plate for serving, and garnish with some lemon peel twists.Last edited on Tue Jul 14th, 2009 04:31 pm by Vargr
