Jicama, Apple, Pear "'slaw"

This looks a lot like coleslaw, but there is no cabbage in it. And the combination of fruits and Jicama give it a distinctly different flavor than "standard" 'slaw.  Light, sweet, with a touch of savory overtones from the yogurt, cilantro, and "southwest" spices, it goes great with summer BBQs, pork, and chicken.  The carrots and red bell pepper add bright spots of color to the otherwise pale green and white ingredients.

Note - the measurements are rather 'open' at this point. I'll refine these when we make it again for the BBQ at Boojum's house.  Just wanted to make sure to get the ingredients down for the shopping trip(s).

1 C+ Plain white yogurt
2 T lime juice

1 Jicama
2 Granny Smith green, tart apples
2-3 carrots (depending on size)
2-3 pears (D'Anjou, red Bosc, or Asian, preferably. Avoid Bartlett as they're generally too soft and juicy to grate well into 'slaw)
1 Red bell pepper
Fresh cilantro
1 can Mandarin orange slices (optional)

Honey
Orange juice (or the juice from the mandarin orange slices)
Hungarian Paprika
Chili powder
Cumin
Graham Masala (optional)
dried ground Chipotle peppers (Optional)

Peel the Jicama.  Core, seed, and slice the red pepper into small dice.

Grate the jicama, apples, pears, and carrots into a bowl, add diced peppers, then sprinkle with the lime juice and toss to coat (keeps the fruit from turning brown).

Chop the cilantro fine.

Mix the spices and cilantro into the yogurt. At 2 T of orange juice. Add a little honey to sweeten slightly. Adjust flavors to taste.  Should be a touch warm, and sour-savory from the yogurt and Southwest spices. Sample the mixed slaw and adjust sauce to "marry" well if needed. 

Mix sauce with the shredded 'slaw, add the mandarin orange slices (optional), stir to combine, cover, and refrigerate to allow flavors to blend.  (at least 1 hour)
