Chilled Fruit Soups

A pair of chilled fruit soups.  The first, a creamy pear apricot, has interesting savory elements that render it a more complex (and to this wuff's tastes, a more "soup-like" quality) dish.  The second (Triple-Berry) is sweeter, with a fresh berry flavor that would serve as dessert, or work equally well as a delicious fruit drink if mixed with Sprite or Club Soda. (or blend in fruit sorbet for a berry fruit smoothie).

Creamy Pear Apricot

4-5 D'Anjo pears, peeled with seeds and stems removed
5-6 Apricots, pits removed
1/2 Qt plain yogurt
2 tsp mint, chopped very fine
2 tsp lavender leaves, chopped very fine
1 - 2 tsp dried cilantro
2 Tbl lime juice
1 Tbl Clover honey (more to taste, depending on sweetness of pears and apricots)
1/2 C white grape juice
Dash nutmeg (1/4 tsp?)

Put half the honey and all the rest in food processor and process until smooth. Taste, and adjust sweetness with honey depending on ripeness of fruit. Don't make it too sweet! Should have a slight savory touch from the mint and yogurt. Too much honey can over-ride that.

Refrigerate until serving time.  Stir in a little 'swoop' of yogut for a contrasting color swirl, and garnish with mint leaves and lavender flowers when serving.


Banana, Strawberry, Blackberry (Triple-Berry Soup)

4 bananas, peeled
1 lb (1 qt) strawberries, hulled
6 Oz (about 1/2 pint) ripe blackberries (approx 1 C frozen)
1 C Orange Juice
2 T clover honey
dash (about 1/2 tsp) cinnamon

Put all in food processor and process until smooth. Adjust thickness with more orange juice, if necessary. This will make a rather sweet dessert soup.

Refrigerate until serving time.

Garnish with blackberries, slices of strawberry, and perhaps a few canned mandarin orange slices when serving.

Note - Variation. Add a compatible fruit sorbet (Orange, blackberry, strawberry, etc), and blend with some of this soup (about 1/2 and 1/2) for a great berry smoothie!
