This is the start of a new project for Vargr. The "Ina Mug" series. Perfect for office or workplaces, hotels, dorms, etc., where all you have is a microwave, fridge to keep things cool, and some simple tools like knives, forks, spoons, and of course, microwave-safe coffee mugs. Most of these should only take a few minutes to prepare. This first is done, start to finish, in under 3 minutes! To begin the series, lets start off with Breakfast! It seems appropriate! ~~~~~ Omelet Ina Mug Ever want a quick breakfast, but didn't want to mess up a pan (or didn't have one), and didn't want to take a lot of time? Perfect for an office breakfast, if you only have a coffee cup and a microwave. Takes about 3 minutes, start to finish, to make. And best of all, it tastes pretty darn good! A touch of Tarragon, a bit of cheese, and a sliver of butter. Add some pepper and your favorite seasoned salt (Vargr likes “Omnivore Salt” or “Bacon salt”), and it has wonderful flavor! And no fat to fry in. So its pretty healthy too! Ingredients: 2 eggs 2 teaspoons milk ½ American cheese slice (or a tablespoon of your fav cheese) Sliver of butter (less than a pat) Pinch of Tarragon Pinch seasoned salt Pinch pepper Directions: Crack 2 eggs into a microwave-safe coffee mug. Add the milk, Tarragon, Seasoned Salt, and Pepper. Whisk together (or use a fork) until blended well, and pretty much all the same color. Tear up the ½ cheese slice into small bits, and drop in. Add the sliver of butter. Microwave on high for one (1) minute. You will find a well cooked, puffy section and part that is still very liquid. Stir thoroughly together. Microwave another 10-25 seconds on high. Microwaves vary in power and performance; watch through the window until it puffs up nicely. It will fall like a souffle when removed. Remove, and enjoy! Note: microwaving too long will dry it out and make it tough, so watch carefully after stirring it up, for the second heating session. Variations: Bits of chopped mushrooms (pre-cooked (use canned)), some small diced tomatoes, parsley, chives, diced bits of avocado, diced ham, ready-cooked bacon (crumbled), some canned spinach (drained), etc. Just remember, it cooks FAST so onions, bell peppers, and fresh mushrooms should be cooked a bit first, or they'll be raw. And go easy on the fillings; there isn't much room in a mug for lots of stuff, and if you use too many tomatoes or other watery ingredients, it will be runny.
