1 teaspoon ground ginger, 1 pinch ground cinnamon, 1 pinch salt, 1 pinch pepper

Mop:

1 cup peach preserves, 1 1/2 tablespoons Worcestershire sauce, 1/2 teaspoon chili paste, 1/2 cup white wine.
